MEATLOAF Spending time in the kitchen was just the place
to be when I was growing up, it was always warm and smelt great!
My Grandma or Mama had that kitchen cooking from the time I got
up to the time I went to bed. There were only six of us,
Grandma, Mama, Daddy, my sister, brother and myself. But hardly
ever were there fewer than 8 to 10 people at our tabel everyday.
Some were weekly regulars, especially if they knew Mama was
baking pies or Daddy was grilling steaks. There was never a
stranger at our table, even though some of them we had never met
before. Whether it would be a relative or a business
acquaintance there was always enough food and fellowship to go
around. That is just some of the love, food, and fellowship that
we shared not to mention the stories and recipes. For the next
few months I will attempt to share some of these with you..
Things have changed with time. Today there are ways to do things
more efficiently. More times then not I have 15 to 20
people at my home, several times a month. So this month I would
like to share a recipe that my family asks for at least once a
week. If I need to take food to some one I will double or triple
this recipe. It is wonderful with mashed potatoes and green
beans.
MEATLOAF
2# ground beef
1 large onion
2 eggs
1 sleeve crackers
( I use club)
2 teaspoon salt
1 teaspoon pepper
1 cup milk (or more if needed)
catsup for smothering
Mix the first seven ingredients together (make sure you mix them
well). Form into a loaf and put into a baking dish spread with
catsup over the top, bake at 325* for 1 and ½ hours. Enjoy! |
