CHICKEN SOUP
This is a great recipe. I know everyone thinks their Mom
makes the best Chicken Soup ever, but my Mom didn’t make
Chicken Soup and I don’t even know who to give the
credit for this wonderful recipe. Some ones Mother or
Daughter gave it to me about 25 or 30 years ago and I
made it for my children when they had the cold or flu
when they were growing up and I am still making it. When
they wanted Chicken Soup they would tell me that they
thought they were getting sick. Now both girls make it
just because they like it, they don’t need an excuse.
CHICKEN SOUP
5 PIECES OF CHICKEN
4 MEDIUM CARROTS
3 MEDIUM STALKS OF CELERY
1 LARGE ONION PEELED
2 TABLESPOONS BUTTER
2 CUPS RICE
1 TEASPOON PARSLEY
1 BAY LEAF
1 TEASPOON SALT (OR TO TASTE)
1 TEASPOON BLACK PEPPER (OR TO TASTE)
In a skillet sauté chopped onions in the butter and sit
aside.
Put your chicken in a large stock pot to cook. When done
strain to remove the scum, reserving the broth. Return
broth to your stock pot. Dice up your chicken, carrots
and celery and add to the broth. Add your sauté onions
and your spices. Simmer for 2 hours till vegetables are
almost tender add the rice and simmer for 1 more hour.
