Black Bean Dip
This is a very busy time here at the Harvey
house. We have sold our home and we are moving. I forgot just
how much work it is to move. The bad thing about it is we will
be moving again in about 9 months. Our house sold pretty quickly
so we moved into a spec home till our new one is built. On the
other hand this is a wonderful time. Summer is finally here! I
just love this season, sleeping with the windows open and waking
up to the fresh air, listening to the birds sing early in the
morning, sitting on the screened porch eating dinner in the
evening. But the best part about this season is our daughter
Lisa and our grandchildren Isiah and Madison come to visit over
the summer! It is always good to have them here. The children
have grown so much since we have seen them last. I am sending
you all a recipe that Lisa’s sister-in-law, Shannon Rojas,
brought to one of our picnics a couple of years ago. We plan to
have it at our annual Fourth of July party. This is a delicious
appetizer that goes great with most other dishes. This is a
wonderful bean dip that lends an air of elegance to an ordinary
picnic or barbecue. Talk about easy and delicious, you will love
this one.
Black Bean Dip
2 cans black beans, drained
1 can shoe peg corn, undrained
1 jar garlic and lime salsa
3 scallions
Combine all ingredients and serve with chips |
